Baby Onion Bhaji
Ingredients:
1 & ½ cup Baby Onion
¾ cup Baby Potatoes
½ cup Roasted Peanuts Powder
1 tsp Goda Masala
3-4 Curry Leaves
For tempering: 2 Tbsp Oil, ¼ tsp Mustard Seeds, ¼ tsp Cumin seeds, ¼ tsp Asafoetida Powder, ½ tsp Turmeric Powder, 1&1/2 tsp Red Chili Powder
2 tsp Tamarind Pulp
1 Tbsp Jaggery
Salt to taste
Method:
1) If you have frozen Baby Onions, no need to peel them. If you have fresh baby onions, Peel them. Do not peel baby potatoes.
2) In a small pressure cooker, heat 2 tbsp oil. Temper with Mustard seeds, Cumin seeds, Asafoetida Powder, Turmeric Powder, Red chili Powder, and curry leaves. Add Onion and Potatoes. Stir on medium heat. add Peanuts powder.
3) Add 1 cup water and bring it to boil. Add Jaggery, Tamarind Pulp, Goda Masala and salt to taste. Close it with lid and pressure cook to 3-4 whistles. After whistles, let cooker cool down.
Serve Onion & potato curry with Chapati.
