Hello vaidehi ,
instead of deep frying the paneer you can actually take 1 pot of water add pinch of termaric powder and bring it to boil and then add paneer pieces wait for two-three min and strain the paneer and wait to get it cool.it will be very soft and will be tasty in sabji.if you can't make it in home you can actually get Nanak paneer in market.thanks alot .your recipes are just so delicious.
